Position Description

As a Commis you will be in charge of the daily tasks assigned for our different outlets. The Commis will be responsible in assisting your team with dessert preparation, decorating and plating various pastries and desserts.

 

Accountabilities 

  • Participates and assists in the proper storage and organization of all food, paper and chemical goods
  • Maintains complete knowledge of correct maintenance and use of all pastry equipment; use equipment and tools only as intended, properly and safely
  • Operates, maintains and properly cleans prep areas, ovens, mixers, ice cream machines, paco jets, storage bins and other applicable areas on a shift basis
  • Prepares all pastry items for service using proper recipes and production guidelines according to departmental standards ensuring the highest level of quality
  • Follows the Pastry Chef's instructions at all times
  • Checks production schedule and stock levels on a daily shift basis; establish priority items for the day; freezer pull and usage for the day while communicating with the chef on duty of any out-of stock items or possible shortages
  • Complies with all nutrition, sanitation and safety regulations and standards
  • Reports all unsafe working conditions, operational needs and equipment or aspects of the pastry kitchen in need of repair to management

Skill and/or Experience

  • 1-2 years of experience preferred
  • Basic knowledge of food preparation techniques, food hygiene practices
  • Ability to multi-task and prioritize
  • Ability to work flexibly under pressure
  • Proven baking experience, including experience as a pastry cook, baker, assistant pastry chef in a fast-paced restaurant and/or hotel
  • Excellent understanding of various baking methods, ingredients, equipment and procedures
  • Familiar with industry's best practices

 

Physical Demands

  • While performing the duties of this job, the incumbent is regularly required to use hands and fingers to handle or feel
  • Incumbent is occasionally required to taste or smell and be comfortable in a cold/hot environment
  • Push, pull, and lift up to 50lbs on a daily basis
  • Ability to stand on your feet for several hours straight

 

Work Environment

  • Must be comfortable working in a shared space, with constant noise, without the use of a private office
  • Must be able to cope with frequent changing priorities and deadlines with a high degree of optimism, professionalism & collaboration
  • Schedules may vary from week to week based on business demands in excess of 40 hours with or without notice including weekends, nights, holidays
